Lazy Christmas Morning Mint Hot Chocolate

This was what we had this Christmas morning. The mixture of cocoa powder and chocolate chips was born of not quite having enough of the cocoa left over after all the holiday baking and I think this unplanned combination results in a richer hot chocolate. Feel free to make up the difference in cocoa powder if you don’t have chocolate chips or you want a drink without refined  sweeteners. To us, nothing quite tastes like December than peppermint, so this is our favorite hot chocolate.


Lazy Christmas Morning Mint Hot Chocolate

2 cups unsweetened plain almond or other non-dairy milk
2 T. unsweetened cocoa powder
2 T. maple syrup
2 T. chocolate chips
1/2 t. pure peppermint extract

In a medium saucepan, combine the milk, cocoa powder, maple syrup and chocolate chips, whisking over medium heat until everything is melted and combined. Keep warming until steam begins to rise but before it boils. Once you see steam, remove from heat, stir in the peppermint extract and enjoy.
