Tofu-Herb Bread Spread
A
little like ricotta, this high-protein spread is lusciously thick and
full of lively summery flavor. Great on bread or wraps, you could also
enjoy this on crackers. I have not tried this myself but if you were
looking for a soy-free option, you might want to try cannellini beans
with lemon juice rather than tamari. Use it as a spread and pile
veggies on top for a tasty alternative to hummus or bring to a picnic
or potluck with crackers.

Tofu-Herb Bread Spread
14-ounces firm tofu, pressed
3 tablespoons tahini
2 tablespoons nutritional yeast
2 teaspoons onion powder
2 teaspoons minced garlic or garlic granules
1 cup mixture of fresh herbs (I used Italian basil, chives and dill - yum!)
1 ½ tablespoons low-sodium tamari or fresh lemon juice
½ teaspoon cayenne
Salt and pepper to taste
Break
the tofu up into large pieces and add all the ingredients to a food
processor, pulsing until combined. Adjust seasonings to taste. Use
right away or, ideally, store covered in the fridge for an hour or
more. The longer it chills, the better the flavor.
