Mango-Coconut Ice
Not ready to let go of summer? Say hello to this easy and tasty tropical frozen treat you can whip up in just a minute.
Mango-Coconut Ice
2 cups ice
1 cup lite coconut milk
½ cup frozen mango
½ tablespoon lime juice
½ tablespoon maple syrup
1 teaspoon vanilla extract
Fresh mint leaves, optional
Put your ice in a food processor.
In a blender, mix together the coconut milk, frozen mango, lime juice, maple syrup and vanilla. Blend until mixed.
Put into the food processor with the ice and mix under the ice is crushed. Serve immediately with optional mint leaves.
