S'mores Brownies
S'mores Brownies

With life being complicated and chaotic, we don’t have much on the docket for this summer, even including camping. We can still enjoy the flavors and memories of the outdoorsy summertime treat, though, with S’Mores Brownies. This is our signature favorite brownie - moist, dense and decadently chocolatey - with the campfire classic ingredients stirred in to make a best-of-both-worlds experience. Not heading for the woods anytime soon but pining for s’mores? We’ve got you covered!
 



S'mores Brownies


1 tablespoon ground flaxseed
3 tablespoons aquafaba
1 cup all-purpose gluten-free flour blend (This is the one I recommend)
¼ cup almond flour
½ cup slavery-free
vegan cocoa powder
1 cup brown sugar
½ cup turbinado or other vegan sugar
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
½ cup melted vegan butter
½ cup vegan milk
2 teaspoons pure vanilla extract
½ cup vegan marshmallows (cut in half if regular size) plus 4 - 5 more for the top
½ cup roughly cut vegan graham crackers, plus some extra for the top
3.5-ounce vegan, slavery-free chocolate bar, roughly cut, reserving extra for the top




Preheat the oven to 325 degrees. Line a square baking pan with parchment paper.

Mix together the flaxseed and aquafaba; allow to gel for 15 minutes in the refrigerator.

In a large mixing bowl, stir together the flours, cocoa powder, sugars, baking powder, baking soda and salt until combined. Pour in the flax mixture, vegan butter, vegan milk and vanilla. Stir until nearly combined, then add the marshmallows, graham crackers and chocolate pieces (minus the bits that have been reserved for the top) mixing with a spoon until everything is combined. Scoop into the prepared pan, and flatten the top with the bottom of the spoon. Scatter reserved marshmallows, graham crackers and chocolate pieces for the top, pressing in a bit.

Bake for 25 minutes; turn 180 degrees and bake 25 minutes more. Allow to cool and slice.

Broil for a minute on high.
