Banana Bread French Toast
One of my favorite Facebook pages, Vegan Trader Joe’s, recently blew up with reports around the country of their new banana bread
,so I knew I had to check it out. (I mean, I’m only there about three
days a week.) I brought a package home and my boys loved it, which set
me to thinking that I should probably welcome the new banana bread into
our lives with a inaugural recipe. It is a winner! Crispy on the
outside and tender inside, this French toast is quick to make and seems
like a lot more effort than it is, especially if you gussy it up with
some extras. Just by itself, though, is pretty impressive.
You do not have to use Trader Joe’s banana bread: any loaf pan-size banana bread will
do. (Pumpkin bread, too!) Chickpea flour and kala namak (black salt)
help to add to the egg-y effect of classic French toast, which is not
necessary but recommended. You can find chickpea flour in most
well-stocked grocery stores (look in the baking section) but I
recommend finding black salt at an Indian market if your town has one.
You can also purchase online.
Also please note that French toast works best with bread that is
slightly dried out. It’s a great way to use up bread that’s gone a
little stale. If your banana bread is fresh and moist, dry it out in
the oven a bit as described in the recipe. If your bread is already a
little stale, you can skip this step.

Banana Bread French Toast
16-ounces vegan banana bread
1 cup plain, non-dairy milk
⅓ cup chickpea flour (or preferred flour)
1 tablespoon nutritional yeast
½ tablespoon pure maple syrup
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
Pinch black salt powder or kala namak (optional)
2 tablespoons vegan butter or coconut oil
Serving suggestion: plate with pure maple syrup, fresh fruit, powdered sugar, additional vegan butter
Preheat
your oven to 300 degrees. Slice the banana bread into eight pieces and
arrange on a parchment-lined baking sheet. Bake for ten minutes.
In a square baking pan, combine the milk and the flour, whisking until
smooth. Add the nutritional yeast, maple syrup, cinnamon, nutmeg and
black salt, whisking again until everything is combined.
Melt the butter or coconut milk on a griddle or a skillet (cast iron is
best) over medium heat. Spread the butter around. Dip the bread in the
milk mixture, covering both sides and edges, and transfer to the pan.
Cook for five minutes. Gently flip and cook five more minutes. If you
only have the small surface of a skillet, consider melting one
tablespoon of butter between each batch.
