Banana Chocolate Chip Muffins
Got
some bananas that are looking a little close to being past their prime?
Good! They are perfect for this recipe. Bananas with brown speckled
peels are the sweetest and absolutely divine in this recipe, which
creates soft, dense and perfected sweet gluten-free muffins. Feel free
to use the flour of your preference if you are not gluten-free.

Banana Chocolate Chip Muffins (Makes 15 – 16)
2 cups gluten-free flour (I like Bob’s Red Mill’s 1-to-1 Gluten-Free Baking Flour)
2 teaspoons baking powder
2 teaspoons baking soda
½ teaspoon salt
½ teaspoon xanthan gum (not necessary but helps the texture of gluten-free baked goods)
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
4 ripe bananas, mashed
¾ cup pure maple syrup
¼ cup plain, non-dairy milk
¼ cup neutral tasting oil (I used refined coconut)
1 tablespoon pure vanilla extract
1 cup slavery-free vegan chocolate chips
Preheat oven to 325 degrees and line a muffin tin with 12 liners.
In a large bowl, mix the flour, baking powder, baking soda, salt, xanthan gum, cinnamon and nutmeg. Whisk together.
In a medium bowl, mix together the mashed bananas, maple syrup, milk,
oil, and vanilla until integrated. Add to the flour mix, stir until
halfway mixed in, and add the chocolate chips.
Fill each muffin liner halfway with batter and bake for 12 minutes;
turn 180 degrees and bake another 10 minutes. Bake any remaining
batter.
