Banana Explosion Cookies
I
found myself recently with most of a bag of white chocolate chips so,
you know, my brain is immediately trying to figure out ways to empty
that bag. Honestly, white chocolate isn’t my jam but my thought process
was that little nuggets in a bar or cookie might be okay, and then
there’s that ripe banana over there, and, yeah, I’ve got some oats that
would love to be matched with a banana and so a recipe was born. While
there are quite a bit of ingredients here - thus the explosion - it’s a
really simple and inexpensive recipe to put together, all mixed up in
one bowl. It’s a generally wholesome cookie - look, ma, no oil! -
but it’s got chocolate chips so there’s no forgetting that it’s still a
cookie.
Some additional thoughts: You don’t need to use gluten-free flour. That
is just how I bake. If you want to substitute regular flour, feel free,
but you’ll need to figure out if any modifications are needed to the
liquid/dry ratio as well as the baking instructions. Feel free, too, to
sub raisins, dried cherries, etc. for the chips, as well as other kinds
of nuts for the pecans. Experiment, just know it will be a little
different. Last, if you want a more indulgent cookie, substitute a
neutral oil for the applesauce 1:1.

Banana Explosion Cookies
3 tablespoons water or aquafaba
1 tablespoon ground flax
½ cup banana (approximately one banana), mashed with a fork
⅔ cup pure maple syrup
⅓ cup unsweetened applesauce
1 teaspoon pure vanilla extract
1 cup plus three tablespoons gluten-free flour (I recommend Bob’s Red Mill 1-to-1 Blend)
1 cup quick-cooking oats
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon salt
½ cup toasted pecans pieces
½ cup slavery-free vegan chocolate chips
¼ cup vegan white baking chips, also known as white chocolate chips (I used and recommend Pascha Organics White Baking Chips)
Mix
together the water or aquafaba and the ground flax in a cup with a
fork. Allow to sit in the fridge for ten - 15 minutes to thicken.
In a large bowl, mix together the banana, maple syrup, applesauce, flax
mixture and vanilla. Add the flour, oats, baking powder, baking soda,
cinnamon, nutmeg and salt. (I find a large, sturdy metal spoon works
best.) Add the pecans, chocolate chips and white baking chips, stirring
until everything is mixed together. It will be sticky. Let it sit in
the fridge (covered) for an hour or so to make the dough less sticky if
you prefer.
Drop by mounded tablespoon onto the prepared baking sheet. Bake for 10
minutes, turn 180 degrees, and bake another 10 minutes.
