Banana Pumpkin Chia Pudding
It’s
that time of the year, which means it’s time for pumpkin-flavored
pumpkin with pumpkin seeds. Or maybe just this pudding, which marries
pumpkin with bananas and other warming seasonal spices. It’s thick,
creamy and just sweet enough. Be sure to use bananas that are fully
ripe, meaning there are some little brown spots, for the sweetest
pudding.
Great for dessert or even breakfast, this pudding has great autumn
flavor and comes together in minutes. (Factor in some chilling time, of
course.) Calcium-rich chia seeds act as the thickening agent here and
this pudding is a great way to bring more omega-3 fatty acids into your
life. Let the pumpkin season begin!
Banana Pumpkin Chia Pudding
1 1/2 cups unsweetened almond or other non-dairy milk
1/2 cup chia seeds
2 ripe bananas
1 cup pure pumpkin purée
4 tablespoons maple syrup
2 teaspoons pure vanilla extract
3/4 teaspoon ground cinnamon
1/2 teaspoon fresh grated nutmeg
1/4 teaspoon ground ginger
Pinch of salt
In
a blender or food processor, add the milk and the chia seeds, letting
the seeds soften for a few minutes as you get everything else gathered.
Add everything else and let it blend or process for a minute or until
everything is very smooth. This will be thick! Transfer to a large bowl
or individual serving bowls and allow to cool and set in the fridge for
at least two hours. Enjoy!
