Cherry Chocolate Chip Banana Soft Serve
Personally,
I think this holds up next to any commercial vegan ice cream. You can
make your own frozen banana soft serve, too, for so much less money, a
lot less sugar and with the exact ingredients you want with just using
a handy food processor. No need to buy an ice cream machine or wait for
hours until it’s ready. This is why my family always has bananas in our
freezer. As the warmer months approach around here, frozen banana soft
serve will become even more of a frequent indulgence.
This is something to make just before you want to eat it. In a matter
of a minute or two, you’ve got a delicious frozen confection. Remember
to use brown spotted (a.k.a., ripe) bananas as they are the sweetest.
You can also put this in the freezer for an hour or two for a firmer
treat that tastes more like packed ice cream.
Cherry Chocolate Chip Banana Soft Serve
Makes two generous servings
2 large frozen bananas, sliced
1/3 cup frozen cherries
1 tablespoon organic, Fair Trade chocolate chips
1 teaspoon pure vanilla extract
1 tablespoon non-dairy milk (I used almond)
Put your frozen banana pieces in your food processor and pulse until it
is crumbly. For me, this takes about 20 pulses. Add the frozen
cherries, chocolate chips, and vanilla, pulsing some more until it
becomes integrated. You will likely need to remove the top of your food
processor at various points and stir to separate as it gathers in one
big lump as it processes. Add the amount of milk you need to get
the creamy texture you want.
Spoon out, serve and enjoy!
