Dilly Tartar Sauce

Ever look at an empty or nearly empty pickle jar and think to yourself, Dang, I should find something for that pickle juice? This creamy sauce was born from my insatiable desire to waste less and be resourceful and also because I craved tartar sauce, which is strange because even when I ate animals, I was not someone who ate fish or sealife. Despite that, I have a fondness for tartar sauce, which can be used on anything you’d use mayo on. This is a decidedly tangier version but I like it even more.


 

Dilly Tartar Sauce
½ cup vegan mayo
1 tablespoon, diced dill pickle
1 tablespoon pickle juice
2 teaspoons dried dill
1 teaspoon granulated onion
1/8 teaspoon red pepper flakes
Salt and pepper to taste



Mix together in a medium bowl and chill. Serve cold.
