Garden Pesto

Sometimes you’re craving pesto but you’ve got a lot of other garden herbs and greens screaming for attention so what do you do? Whip up a batch of garden pesto, which makes use of ingredients like spinach, parsley and chives to help create a bright, flavorful pesto waiting to go on pasta or have bread or veggies dipped in it. I use lots of garlic in this because that is how I roll but if you’re not in the mood to repel vampires yourself, feel free to reduce the amount. Olive oil is not necessary but will make for a richer pesto. Even one tablespoon is enough but, again, it’s not necessary. If the pesto is too dry and you don’t want to add oil, try adding vegetable stock by the tablespoon, understanding that it won’t taste exactly like traditional pesto.

Garden Pesto

2 packed cups fresh basil, removed from stems
2 packed cups spinach, regular or baby
½ cup chives
½ cup Italian parsley
½ cup toasted pine nuts
2 tablespoons minced garlic
2 tablespoons fresh lemon juice
2 tablespoons nutritional yeast
1 tablespoon chickpea miso
Olive oil, optional
Salt and pepper to taste



Combine everything in a food processor and process until smooth. Add salt and pepper to taste.
