Magic Popcorn Fairy Dust
The
first time I heard about the sorcery of nature that is nutritional
yeast + popcorn, I was in college and a friend who worked at a hippie
co-op told me that I just had to try this combination. I looked at her
askance because by that point, I was a bread baker, so I couldn’t
imagine the stuff in those little packets used to make bread rise
tasting good on anything. “You have to try it,” she coaxed me.
“Don’t be closed-minded.” The next time I made popcorn, I opened a
packet of active yeast and poured it on top. “I really don’t see this
working out,” I thought to myself. I was right. It was beyond inedible.
What did I do wrong? I asked my friend, who burst out laughing at me. I
had used the wrong kind of yeast, the kind that is used for baking.
Nutritional yeast, the B-vitamin packed is the magic dust that gives
vegans our impressive super powers. We snort this stuff like we’re at
Studio 54 in 1978 in a back room with Jagger and Warhol. I’ve heard
rumors of vegans who do not like nutritional yeast but I think this is
unsubstantiated.
What is nutritional yeast? Well, to those in the know, it is nooch,
which sounds like hooch, which is perhaps not surprising given it’s
addictive qualities. It is deactivated yeast in all its cheesy, nutty,
savory splendor. (I mean, who doesn’t start drooling when they hear the
words deactivated yeast?) It is not to be confused with active
yeast, the kind used in baking. Adding spices to nutritional yeast
creates a spellbinding substance. Don’t just take my word for it,
though. Whip up a batch of this today and try it on your popcorn.
You can find nooch online, in bulk at natural foods store or in
containers in the nutrition section of those same stores. This is also
good sprinkled on garlic bread or corn.
Magic Popcorn Fairy Dust
1 cup nutritional yeast flakes
2 teaspoons onion granules
2 teaspoons garlic granules
1 teaspoon smoked paprika
1/2 teaspoon cumin
1/2 teaspoon salt
Mix all the ingredients together in a food processor until well combined.
Prepare your popcorn. We air-popped ours and distributed oil after it was popped using a Misto
with olive oil. Sprinkle liberally with Magic Popcorn Fairy Dust and
enjoy! Store any leftover fairy dust in an airtight container.
