Packing Lunch: A Vegan Back-To-School Special

Throughout our son’s elementary school career, we have found that packing sandwiches, wraps or anything that didn’t need to stay warm worked best. We also discovered that sandwiches and wraps mitigate the “Ew! What’s that?!” element that our son doesn’t want about his vegan lunches. They are also portable and quick to eat. We have never really experimented with packing a hot lunch in a Thermos because our son has been happy with this approach but if you do go that route, soups, chilis, and stews are great for packing along. By the way, these don’t have to be for school lunches: consider bringing packing them for your own lunch. Of course, everything listed is meant to be vegan, even if not expressly said.

School lunch ideas:
Hummus and veggies
Black bean burger and the works
Cream cheese and veggies
(for example, shredded carrots and cucumber) in a tortilla roll-up
Sunflower seed butter and banana sandwiches
(our school discourages nut butters due to allergies)
Rice and beans and avocados in a wrap or a burrito
Hoagie with veggie cold cuts and, condiments and vegetables
Pesto and a baked potato
TLT sandwiches
(Tempeh bacon - or seitan bacon - lettuce and tomato)
Pizza bagels or pitas
(tomato sauce or marinara, cheese, spinach, etc.)
Breakfast sandwich on an English muffin
with veggie sausage or bacon, cheese, spinach and tofu scramble
Chickpea tuna salad sandwich and veggies
Meatball sub
(pack marinara in another container to keep the bread from getting soggy)
Falafel and pita,
tahini sauce on the side
Vegetable maki rolls
Vietnamese spring rolls
(pack with a damp paper or tea towel to keep them from drying out)
Spinach pie
Cold pasta salad


Sides:
Cut fruit, like watermelon, apple wedges, etc.
Grapes, oranges or clementines
Muffins
Pita chips
Ranch or pesto dressing and veggies for dipping
Granola bar
Pretzel rods
Pudding
Kale chips
Guacamole and tortillas
Fruit oat bars
