Tahini-Salsa-Lime Oil-Free Dressing

Finding a good salad dressing that you can make every day with the simplest of ingredients is fantastic. Finding one that is reasonably nutritious, tastes delicious and without extracted oils is the Holy Grail. This is the one, my friend. This is my everyday dressing. I am not sure why tahini + salsa + lime works but it does. You will have to trust me on this or at least try it out for yourself. The creaminess and richness of the tahini plus the zesty piquant flavor of salsa and lime just interact so beautifully together. Thinning it out with a bit of water makes it perfect for salads, kind of reminiscent of Thousand dressing but…different. This is also a great canvas for goosing up with garlic granules or a bit of cayenne pepper but just perfect on its own as well. 
 
 

Tahini-Salsa-Lime Oil-Free Dressing
One serving

1 tablespoon tahini
1 tablespoon salsa
1/2 tablespoon fresh lime juice
Water to thin
Optional spices: garlic granules, cayenne pepper, fresh pepper



In a small cup, mix together the tahini, salsa and lime juice until incorporated together and very thick. Add water slowly until it’s at the desired thinness. Pour over salad and enjoy!
