Vegan Cheddar Cheese Topper

I got the thought the other night that I wanted to have some vegan cheddar popcorn. Not the kind with the very chemical-tasting cheese flakes you can find at the store nowadays (okay, how old did I just sound?) but also one that tastes like a few steps above simple nutritional yeast. Now, don't get me wrong: I am a huge fan of nooch but sometimes you just want to take things to the next level and I think this Cheddar Cheese Topper does the job while remaining really simple to make. Hitting on the idea of tomato powder was what inspired me to see how this recipe might work out. It would add some of the pungency of cheddar as well as the orange-y color I was seeking. (Annatto powder would work as well but has a different flavor profile.) You can buy tomato powder at specialty spice stores but what I did was throw some dried tomato pieces in my Vitamix and blend until powdery. (I bought this brand, which you can find near the dried fruit of a natural foods store.) It worked smashingly well! Not limited to popcorn, this would work great on everything from pasta to shaking over garlic bread. and baked potatoes. Store in a covered container in the 'fridge and it should last a few weeks.

Vegan Cheddar Cheese Topper

1 cup nutritional yeast
1/4 cup ground almond meal
2 teaspoons tomato powder
1 teaspoon sweet paprika
1 teaspoon garlic granules
1/2 teaspoon onion granules
1/2 teaspoon ground mustard
2 teaspoons solid, refined coconut oil 
(optional: do use refined, though, to avoid a coconutty flavor)
1 tablespoon miso
(I used chickpea)
Salt to taste




Mix together in a blender until powdery and store in the refrigerator.

To add to popcorn, mist lightly with oil to get it to stick.
