Chocolate Blueberry Fudge
Rich,
dense and shot through with a subtly pleasant blueberry flavor, I won’t
go so far as to claim that this fudge is health food but how many other
chocolate confections are boosted with all the excellent antioxidant
virtues of this favorite summer berry? I was thinking about scheduling
a visit to our favorite local blueberry u-pick
when this vision of this recipe swirled up in my head. Of course:
summer = fudge and blueberries love chocolate. This recipe is super
easy to make and mixed together in just one cooking pan. Because this
fudge is so intensely chocolate-y and rich, you will need only a little
square per serving, which makes even a small pan last a long time.
Chocolate Blueberry Fudge
1 cup fresh blueberries
1 tablespoon water
12 ounces Fair Trade, vegan chocolate
2 cups powdered sugar, sifted
¼ cup Fair Trade cocoa
6 tablespoons vegan butter (I used Miyoko’s) or coconut oil
1 teaspoon vanilla
¼ cup full-fat coconut milk
Pinch of salt
First, purée your blueberries with the tablespoon of water in a blender or food processor.
Line an 8-X-8-inch with parchment paper.
In a medium bowl, combine all the ingredients, including the blueberry
purée. Fit this into a larger pot with a few inches of water in it.
Bring to a gentle boil and stir until the chocolate is all melted and
everything is smooth. Pour into your prepared pan and allow to cool in
the fridge for at least two hours. Cut into squares and serve.
