Fourth of July Fruit Skewers with Agave-Lime Glaze
There
is something about eating foods on sticks that makes everything so much
more fun and delicious. Is it primal? Is it just laziness? Is it
because we are easily bored? Does it say something unfortunate about
the influence of tacky festival food? No matter its origins, there is
no denying the popularity of food on a stick. With a citrusy glaze that
brightens the flavor and keeps the bananas from getting brown, this is
the perfect healthy treat to create with little hands, and it’s so much
fun to see the flag start to take shape. No matter your country of
origin, you can turn delectable fruit into a fun, edible representation
of your national flag.
I used one half-pint of blueberries, 1 pint of raspberries (simply
because those were more likely to have been crushed at the bottom) and
4 - 5 bananas. I used thirteen skewers - four had seven blueberries, and then three banana slices alternating with three raspberries; three
had four blueberries alternating with three slices of banana, plus
three more slices of banana alternating with three raspberries; the
last six were all alternating
raspberries and banana slices for the stripes. (Confused? I don’t blame
you. You could just blow up the photo to see better.) You could also
decide to use other fruit, for example strawberries, cherries, or
blackberries.
Last, I used an agave-lime glaze to keep the bananas from turning brown. I brushed it on after the skewers were put together.
FourAgave Lime Glaze
2 tablespoons lime juice
2 tablespoons agave nectar
Mix
with a spoon and gently brush over the skewers. If you have any
leftover liquid, add some ice and water for an instant limeade.
Serving suggestions: Eat off the skewer herbivore caveman style or dip the fruit in vegan yogurt or pudding. Enjoy!
