Cherry-Chia Overnight Oats
It
seems like overnight oats are all the rage these days, and they are
especially appealing when it’s hot out and you want a healthy, tasty
breakfast without needing to turn on the stove. This is made with the
gorgeous ripe cherries that are currently in season, but any berries or
other fruit would work just as well. This is a simple but filling
breakfast that is high in protein, fiber, antioxidants (cherries are a
powerhouse against inflammation) and those coveted omega 3s from the
chia seeds. I layered this this to make it a little prettier, but it
can be added straight into the jar without premixing in a bowl to make
a no-fuss breakfast that is just waiting for you in the morning.
Cherry-Chia Overnight Oats
1 cup old-fashioned rolled oats
1 tablespoon chia seeds
1/2 teaspoon ground cinnamon
Dash of salt
1 cup non-dairy milk* (I used plain, unsweetened almond milk)
2 - 3 teaspoons maple syrup
1/4 teaspoon pure vanilla extract
1 cup cherries, pitted
Combine the oats, chia seeds, cinnamon and salt in a medium bowl. Stir in
the almond milk, maple syrup and vanilla. In a 16 oz. glass jar with a
fitted lid, layer the oat mixture and cherries or simply mix altogether
in the jar. Put on the lid, refrigerate overnight and enjoy!
* Use more milk if you want creamier oats.
