Fudgy Raw Cherry Brownies

I’ve been revisiting and adapting recipes I’ve created lately (I mean, I did it twice, so I guess I’m on a kick) and this week is no different. My recent Fudgy Raw Frosted Brownies were a big hit so I wanted to modify them a bit for Valentine’s Day. I simply added some defrosted frozen cherries and juice, and, voila! Perfect for Valentine’s Day, or, really, whenever you like. Frozen raspberries would work just as well

Fudgy Raw Cherry Brownies

1 ½ cups pecans, unsalted
1 cup raw almonds (I used slivered)
2 cups plump and soft medjool dates, seeded
½ tablespoon pure vanilla extract
½ cup slavery-free cacao powder
¼ cup pure maple syrup
½ cup defrosted cherries
3 tablespoons reserved juice from the defrosted cherries.
Pinch of salt



Pulse the pecans and almonds together until they are fine crumbs in a food processor. Add the rest of the ingredients and process until as smooth as possible. Press into an 8-X-8-inch baking pan, lined with parchment paper. It will be sticky! Wet hands or the back of a large spoon will come in handy.


Frosting

½ cup nut butter (peanut butter or cashew will be the creamiest)
1 teaspoon pure vanilla extract
⅓ cup cacao powder
¼ cup pure maple syrup
2 - 3 tablespoons reserved cherry juice from defrosted cherries
Pinch of salt

In a medium bowl, combine the nut butter, vanilla, cacao, maple syrup, cherry juice and pinch of salt until smooth. Spread over the top of the brownies and put in the fridge for a couple of hours. Cut and serve.
