Herb-Mashed Potatoes
A
variation of the famous Irish dish calconnon, these mashed potatoes
have spinach but also bright, vibrant flavor from fresh dill and
chives. It’s also easy, quick and inexpensive to make.
Herb-Mashed Potatoes
12 Yukon gold potatoes (approximately 6 cups), peeled and diced
½ cup plain non-dairy milk
2 tablespoons vegan butter (optional)
2 cups baby spinach
2 teaspoons garlic granules
2 tablespoons minced dill
2 tablespoons minced chives
Salt and pepper to taste
Heat a large pot of water over medium-high
heat. When it starts to boil, add the potatoes. Cook for 10 – 12
minutes or until tender.
Meanwhile, in a small pan, heat the milk and butter over a low flame until the butter melts.
Drain the potatoes and mash with the warm milk, spinach and garlic.
Mash until smooth, adding milk by the tablespoon if it’s too dry. Stir
in the minced herbs and mix until incorporated. Salt and pepper to
taste.
