Mango Lassi

Mango Lassi

Is it cheating when a recipe is too easy? I don’t call that cheating. I call it winning. Mango lassis are refreshing, naturally sweet and creamy. They are easy to make in your own home with just some simple ingredients and a blender. When mangoes aren’t in season – or even when they are – frozen mango is a great replacement for fresh.

Mango Lassi

2 cups unsweetened, plain non-dairy yogurt
2 cups fresh or frozen mango or mango puree
½ cup unsweetened, plain non-dairy milk
4 tablespoons maple syrup
1 cup ice cubes
¼ - ½ teaspoon cardamom
(optional)
2 tablespoons coconut cream
(optional)

Blend and enjoy! Serve immediately. If it’s too thick, add a bit more milk.
