Mexican Wedding Cookies
Like
many people, I’ve been increasingly saddened and upset by the US’s
treatment of immigrants and asylum-seekers. As an activist who
endeavors to speak up on the side of compassion and justice, I have
been feeling especially overloaded by recent events and I know that I
am not alone. I also know that the antidote to despair – as far as I am
concerned – is mindful action and coming together as a community. This
is why I didn’t skip a beat when my friend Ashley of Logan Arcade in
Chicago reached out to me with the idea of doing a vegan bake sale,
hosted at the location of their fun, popular space. I put up an event
page the next day and the Vegan Bake Sale for Immigrant Families and Asylum-Seekers
was born. Within minutes, restaurants and professional bakers started
reaching out to me to see if they could donate, as well as lots of just
regular folks who wanted to contribute in some way, either through
baking, volunteering or donating money. Our bake sale is happening
Sunday, July 1, the day after rallies around the country starting at 12:30 at Logan Arcade, 2410 W. Fullerton
and we have more than ten professionals lined up who are donating vegan
baked goods as well as many more bakers. Please join us if you are
able! All proceeds – every last penny – will be split between RAICES and PASO,
two organizations that provide advocacy, legal counsel/protection,
reunification and legislation for immigrant children, families and
refugees. (If you cannot make our bake sale, please consider donating
to one of these wonderful charities.)
I am so honored to be able to do this and, honestly, still so worried
about people in jeopardy. These classic and simple to make Mexican Wedding Cookies,
tender but crispy, were developed with these vulnerable but strong
people in mind. Please continue to speak up for those who are most
affected by our racist and indifferent national policies.

Mexican Wedding Cookies
1 cup vegan butter, softened and cubed
¾ cup powdered sugar
2 teaspoons pure vanilla extract
2 cups all-purpose gluten-free flour (I recommend this brand)
2 cups pecan pieces, toasted and pulsed until crumbly in the food processor (walnuts or almonds will also work, or a combination)
1 – 2 tablespoons nondairy milk or water
¼ teaspoon salt
Extra powdered sugar for rolling (about ½ cup)
Preheat the oven to 350 degrees and line two baking sheets with parchment paper. Pour your extra powdered sugar on a plate.
Gather about a golf ball size dough in your hands and gently squeeze
and shape into a firmer ball. Roll around on the plate with the
powdered sugar until covered and do this with the rest of the dough.
Bake for 8 minutes, turn 180 degrees, and bake another 9 minutes.
Remove from the over and cool on a cooling rack for ten minutes. When
cool enough to handle, roll the cookies again in the rest of the
powdered sugar and allow to cool completely before serving.
