Roadtrip Energy Bliss Bites


We recently drove from Chicago to Pennsylvania and at the eleventh hour before leaving (is there any other hour around here?), I realized that we didn’t have any snacks planned. Given that we would be leaving town in a typically sleep deprived state, I wanted to make sure that we had something with us that could help to give us a boost without weighing us down. These Energy Bliss Bites are the result of a last minute panicked search through the cupboard and a few little brainstorms. I have to say, I think these are pretty splendid. Not only did we make it to Pennsylvania without a hitch, but they tasted good along the way and didn’t require refrigeration.  They didn’t even require turning on the stove top. Further, these little guys will give you the sweetness you crave without a big sugar rush and crash. Reminiscent of chewy brownies, they’ve got a great nutritional profile from the hemp seeds (rich in omega fats) and a rich chocolate flavor without any refined sugar. You will want these around whether you are on the road or just looking for a little boost in the middle of the day at home. 


Roadtrip Energy Bliss Bites

1 cup medjool dates, pitted
1/3 cup dried cherries
1/4 cup walnuts (optional)
1 tablespoon cacao powder
2 teaspoons pure vanilla extract
1/4 teaspoon cinnamon
Pinch of salt
2 - 2 1/2 tablespoons shelled hemp seeds (optional)




Combine everything but the hemp seeds in a food processor and process until it gathers into a big lump. Refrigerate this for 30 minutes or more to make them easier to roll. When it is chilled, roll into balls (I used a melon baller, but a measuring spoon or regular spoon would work just fine) and then roll on a plate that has hemp seeds spread across it. Serve chilled or at room temperature. Enjoy!



Recipe notes

You will want really soft medjool dates for this. If you have some that are drier, soak them in hot water for 15 - 20 minutes before preparing and drain.

Feel free to omit or substitute something else for the hemp seeds, for example, dried coconut or sesame seeds.
