Yummy Mummies!

Yummy Mummies!

Like a pizza on an English muffin canvas, Yummy Mummies were something I engineered years ago for our Chicago Vegan Family Network potlucks and ever since, it’s not a real Halloween party unless we have them. Simple, fun, and tasty, children love these.

6 English muffins
Tomato-basil marinara
24 sliced olive “eyes”
48 thin strips of vegan cheese* (I used Follow Your Heart mozzarella)

Preheat the oven to 375 degrees. Split the English muffins in half so you have 12 halves. Spread approximately 1 tablespoon of marinara on each half. Lay four strips of cheese across the English muffins at different angles so they look like mummy wrapping. Place two olive slices on each “mummy” for eyes. Place the mummies on a parchment lined or lightly oiled cookie sheet. Bake for about 14 - 16 minutes, or until the cheese is beginning to melt.

Enjoy!

To create the wrapping, it’s best to work with slices or blocks of cheese. I cut the mozzarella into thirds from top to bottom and then used my vegetable peeler to cut thin slices.
